Welcome to the forums.

If you are using Realtrack piano then the sound is set since it is an audio file of a top class musician playing the piano.

If using midi piano, then the sound can be changed. To make it easier to do this, I suggest that you change your track names to the static names. These will be the ones that you are used to from the previous version. This is done by clicking on "Prefs" (#1 on image below) or going "Opt. | Prefences" and then deactivating "Auto-generate track labels" (#2).



After doing the above, the names in the mixer will be the old names that were used in earlier versions of BIAB.

To change a midi sound, simply right-click on the instrument name (not track name) and choose "Select MIDI Patch".

P.S. Also note that anything MIDI is named with yellow names while anything Realtracks is green.
