As mentioned; they are generally manually transcribed
Not all RealTracks have these charts available.
Someone had to actually replay it and write it out. I imagine there could be quite some time involved in that, unless it was recorded in MIDI also during the original takes.
I do not work here, but the benefits are still awesome
