I want to write a m7add11, and add9 and other chords like, but BIAB won't let me. Is there a way to overwrite that?

There is a m11 chord in the list, but I believe that will also include the 7 and 9 (C-Eb-G-Bb-D-F)

BIAB doesn't support an add9, but uses the 2 instead (e.g. C2). That may not be the note order you want, however, but it where the 2 (or 9) shows up is style dependent.

I concur with John but would like to comment. The two examples you gave are handled differently.

If you try to type Xm7add11 BIAB will not accept it. You have to type a supported chord such as Xm11. You can always see all the supported chord types in BIAB by right-clicking, selecting Chord Builder, and clicking on the pull-down for other chord types that says 13#9#11

If you type Xadd9 it IS accepted by BIAB, but (assuming a recent version of BIAB) is converted to Xadd2. Internally, add2 is the same as 2. You can also enter X2. The reason they are the same is that BIAB has chord entry shortcuts that make this conversion to a chord type that is supported, and, as John said, the 2 chord is directly supported.

Try inversions of the chord you're looking for. Cm7add11 could be respelt as Eb69/C. Some extended 7th chord spellings such as C7sus#9 could be used as an equivalent for the same chord.
The trick to ensure no other notes are added is to set all embellishments for any chordal instrument in the stylemaker to 0.
