I don't know what version you have before 2017 but it you want to get back to the previous look main screen, use CTRL+T. This might put you into more familiar territory. (I've also highlighted the shortcut to the 2016 view on the image below.)
It's still possible to save/render tracks just like in the past. That's under the "Audio" menu on the very top tool bar.
