My go to book is Arranging Techniques for Synthesists by Eric Turkel.

This book gives the ranges of acoustic instruments. This includes all orchestral and jazz instruments from violins to saxes. It also includes how to arrange for an orchestra or band.

For someone like myself who is into MIDI but limited to the knowledge of many instruments this book was a God sent. YMMV
