The user manual says:

Patch changes are embedded in the Band-in-a-Box styles and these patches are loaded with songs by default. They can be disabled in the MIDI Options dialog found in the Preferences.


So go to the MIDI options under preferences and uncheck the box "Style Patch Changes".

Set the instruments you want, then try loading a new style and see if the instruments stay the same. This only works for MIDI (not RealTracks or RealDrums), and you may end up with weird results, as you might find a guitar part being played by an electric piano or a horn part being played by an electric guitar, depending on the style definitions and the instruments you have chosen for each track.
