Is the track you are recording to a MONO Audio track type?

Right-click and select Track Type before recording the track, and select MONO Audio as the track type.

Then panning to center should work as expected.

There are also options in Prefs-Audio to set whether you record 2 MONO tracks (one left and one right) or either the L/R only when you record to a mono track type.

Your post sounds like you may have recorded a stereo track with signal on only the left side, which will not sound good centered.

Another option is to use the 'Split stereo track to two mono tracks' feature on your existing track.
This puts left on one track and right on another, so they are separated.
Then you can have your existing recording a mono track, and can erase the other un-needed track. Panning this new mono track to center should indeed center it.
