Hi Chris. #2 has good ideas.
About #1, did you find the BIAB File, Print Options menu? It's not exactly like Encore's method, but if you change the song name in either the Print options or the Chordsheet, the change will be reflected in the other. And there are places there for the other text options you mention.
By the way, do you know Encore is back in business and is still available for sale? I have done beta testing for them. Version 5 is much improved.

Band-in-a-Box 2026 Video: AI Stems & Notes - split polyphonic audio into instruments and transcribe
This video demonstrates how to use the new AI-Notes feature together with the AI-Stems splitter, allowing you to select an audio file and have it separated into individual stems while transcribing each one to its own MIDI track. AI-Notes converts polyphonic audio—either full mixes or individual instruments—into MIDI that you can view in notation or play back instantly.
