I want to make tempo changes where the whole recording gradually slows down or speeds up (rallentando, accelerando etc...) mostly as an ending but sometimes in the middle of a song before returning to the original tempo (a tempo).
Is this possible? I know I can change the tempo bar by bar in bar settings but can it be done as a gradual continuous change?
You can introduce Rall. but not little-by-little, instead, only one bar at a time.
As you are aware, proper Rallentando provides a gradual decrease in speed.
BiaB changes the tempo at each bar. Rallentando has been requested many times.
Press function key F5 at the required bar and set the required value:

The % Change in BIAB is normally enough for me, but when it isn't, I do the editing in a DAW or sound editor program that supports pitch and time shifts.

Hi, slowing down using F5 and a negative % works but I found on playback in BIAB it sometimes stops for short periods in playback. It is fine once rendered. I also found it a bit complicated but ok once used to it.
At the risk of sounding like an advertising guy my preferred method is to pull the files into Reaper. Set the playrate option to change playrate whilst holding key then add an automation lane to alter playrate. Then simply drag the rate and slope shape to what you want. Very simple and extremely efficient.

If one wanted a smoother slowing down in 4/4 time, it would be possible to create 2/4 bars in place of the 4/4 bars (nothing else needs to change) and then use bar settings across the bars.

Depending on the style the 2/4 measures can be a problem by starting the style at the beginning of the measure every 2 beats. I find it works OK in some styles but not others.
The best solution to me is exporting to a DAW and using the rit or rall function there.
IMO BiaB is an excellent auto-accompaniment app, the absolute best available. However exporting the BiaB project into a DAW can take the very good results from BiaB and make them even better.
Power Tracks Pro Audio, Cakewalk/Sonar, Cubase and so on can help enhance your project.

When I come up to the ending, I will generally do a slow down to a hold in 2 measures. I add a few measures. And make them all 2 beat measures. I found that if I try to slow down on a 4 beat measure, the speed drop is noticeable in that it's abrupt and not smooth. So if the song is at 120bpm, the first 2 beat measure drops to 110, then the next 2 beat drops to 100 followed by drops to 88 then 75... and finally a hold with fade to silence.
The drops can be non-linear as a slow down tends to increase in slowness.... This tends to give me a very smooth deceleration.
This is just one song where I have used this very method to slow the song to a hold ending
edit: remember that when you edit the bar settings, everything that follows will have the same new settings. So, you will need to add or use following measures to pick back up and go back to a 4 beat bar....
Also..... I ALWAYS compose my songs in Band In A Box ( BB for short ). That's where I set the tempo, key, formulate the intro, structure of verses, choruses, and all the other goodies. I do my slow downs in there too. Then..... I save and close the project in BB and reopen it in Real Band (RB). RB gives me all the tracks rendered to audio. AND.... I can add other instrument real tracks that may not be in the original BB style. Such as steel guitar in the LA Hard Rock style. I then export my audio tracks to Sonar which is my DAW of choice and continue to add vocal and live instrument tracks and do the mixing. All of the RB tracks will follow the template you build in BB including the pauses and slow downs.
