If I'm reading you correctly, you want to build up tracks a bit at a time and keep the bits you have already put together. If this is so, then Realband is your better option as you can work on sections of a track and the track remains intact between sessions. BIAB will freeze tracks but it is difficult to construct individual tracks incrementally. This is easy in RB. Just block out the section you want and then generate a RT in that section.
