In Chordbuilder there is no Gb. You'll also notice that there's no C# or D#, etc. (I imagine that this is to economise on space.)
This does not necessarily mean that that's how it will display on the chordsheet, though, because the chord that's displayed is determined by the key signature.
There is another way to enter chords. Simply type them on the chord sheet. With this in mind, as a test, place the cursor in bar 6 and then type Gb7 <enter>, do you get what is shown on the image below?
