I have a friend who's a sax ballad specialist. Stuff like Embraceable You, Yesterdays, April In New York, Days of Wine & Roses, As Time Goes By, What a Wonderful World, Angel Eyes, Europa, Masquerade, My Funny Valentine, etc. He plays a lot of held whole tones with a ton of soul and older audiences eat it up. He does these at what he calls New Orleans funeral march tempo, slooow. I do some of these with other bands and they're usually up tempo especially Wine & Roses and Masquerade but with him they're strictly ballads and they go over great in a restaurant. I will occasionally get called for a solo piano gig and will do these same tunes and they're great for that too. They're quiet, melodic classic songs.
I think with this group, the latin ones and you're Ellington and Rat Pack tunes, you've got your gig covered. This is pretty much a standard high class restaurant song list anywhere in the western world.
