That's the way the program is in the Windows version also.

When the lack of MIDI editing tools for the Bass, Piano, Drums, Guitar and Strings accompaniment tracks was brought up in past forum conversations, PG Music responded this is part of the program design and is on purpose.

The Bass, Piano, Drums, Guitar and Strings tracks are reserved for use by the auto accompaniment feature of the program while the user has full creative control over the content of the Melody, Soloist and Audio tracks.

In the Windows program a workaround is to copy the MIDI content of any auto accompaniment track to the Melody or Soloist track to modify as desired. Once the edits are made, copy the content back to the track and freeze the track or render to an audio file, place the audio file on the Audio track and either turn the volume of the unused track to zero or disable the unused track.

Have you thought of submitting a wishlist request? Since in this instance both the Windows and Macintosh programs work the same way a wishlist request should generate a lot of discussion as well as give PG Music some feedback about how much support there is for the idea.
