Often you can set a switch (button) whatever to send different levels. I do it when using guitar amp sims. You “learn” a button set the min value to 70% or say midi value 100 then set the max value to 100% or 127. How this is done depends on the plugin but most of the plugins I’ve used allow this no worries eg Guitar Rig, TH3, Z3TA, FM8 of memory TTS1. DAWs usually also allow it.
