It's not quite clear what you try to express via 'I then make the F a sharp'.
Maybe you tried to have an F dispayed as E# via clicking on 'Sharp' within the Force Accidental note edit dialog at some entered note E? The Force Accidental dialog just affects the display of accidentals - it won't change notes, such as an E to an E# or F for that matter.
But then again, 'the F became an E instead of an F#' sort of doesn't make sense at all.
We likely need just more info here.
For what it's worth, the Edit Note dialog works here like a charm.

Ha! You may have just inadvertently solved this!
If I understand you correctly, making a note sharp by clicking the 'sharp' radio button (which is what I did) will not actually make it sharp but change it to 1/2 a note lower and add sharp sign.
That will result in an F made 'sharp' becoming an E# which is pretty much what I have occurring here.
Great.
Now I still need to get help on how to extend the notes to the correct duration and keep that duration there when other notes are entered. See my picture (last post first note).

Placing a note further along the stave will shorten the previous note. You can shorten if further by placing a rest. See my first response to the original question. You can set the note duration in the note editor also. Also, make sure Mono mode is unchecked:
