My guess is the Lead sheet print out is picking up the original MIDI patches that were in place when the style you're using was created. Many of the styles seem to be modifications of MIDI styles.
You can verify if this assumption is correct by performing Alt + F2 to open the "Save Special" > "Save Song With Patches And Harmony" window. The window, see below, will display what MIDI patches are assigned to the original, unmodified style the style your using was created from.
