Hi Debby,
As I understand it, in bar settings, the key signature only sets the key of that bar and subsequent bars. It's not meant for transposing. It's much the same as drawing an F# on the stave to show that the music is in the key of G or E minor.
To transpose the song, I use the the key signature setting found to the left of the tempo. Alternatively, under "Edit" there is an option called "Transpose" that allows me to transpose a particular region in the song.
