Hello,
Track Actions --> Save as AIFF is working the same as in previous builds in my testing. However I think the issue might be that if you are right-clicking on the track at the top of the screen to access this menu item, you need to first left-click on it to make it the active track. In previous versions, the right-click by itself is enough to select the track, so I do think this is something that needs to be fixed in version 2021.
