It doesn't work exactly the way you interpret.
Some RealTracks have associated MIDI data. In those cases, the MIDI data you see is usually manually transcribed from the RealTracks data. This means that it will have a more 'rigid' sound.
RealTracks are audio sound recorded segments, which are different to MIDI data which are digital data commands to go to a sound module to convert to the audio.

Essentially, there is no method available to convert the initial audio track into MIDI, except for the manual transcriptions. Some exceptions include keyboard instruments, where the player's performance can also be output to MIDI simultaneously.
