When you're in the Notation Window, hit the Opt button to bring up Notation Window Options.
In the top-left corner, there'll be a checkbox for "Triplet Resolution" that you can toggle on or off, but whether or not the notation window will show triplets when you next open the project, is decided by the Style that you've chosen, as Rachael said.
