I think they simply started with a musical idea and then as it evolved, were saying, "hey, lets do this!" and if it worked, they kept it. That is the way music should be written in most cases. I have always told my students learn music theory but don't let it interfere with you playing. That is play from the heart. Use theory to expand your musical horizons but don't let it dictate your playing. I believe this video proves that.
