If you just do free-form recording (without a click-track of some sort), setting the tempo doesn't do anything for you, since it won't be exact tempo, anyway. obviously, the bar lines are going to line up based on whatever tempo is set, but that won't match your free-form playing.

If you need to use MIDI or want to add drums later, you can always take what you recorded and use Audio Chord Wizard to generate a tempo map of your playing (in addition to figuring out the chords, it can be used to establish variable tempo within the song).

I would probably just set it close to what you plan to play and then let her rip. It won't line up, but having it close to the tempo you are playing will make it easier to find sections later.
