I think FluidSynth has been the de facto MIDI SoundFont synthesizer on Linux for quite a few years now. It's certainly the one I go to.
It's been on Linux and Windows since about 2005 and on MacOS since about 2008.

The other obvious similar synth is TiMidity++, which is also OpenSource and cross-platform.

I've long preferred FluidSynth, but that may just be me.
