Regarding the new AI features including stem separator and lyrics:
1) Do these run 100% offline, or is there an online requirement?
2) Do they take advantage of the new CPUs with integrated NPUs? In answer to your first question, it is my understanding that the stem separation is handled 100% offline. The system does not need an internet connection for stem splitting. I'm not able to answer your second question, sorry, but the stem separation time is very acceptable. I'm also not sure if the stem separator function is AI based, as suggested in the post title.

This video demonstrates how to use the new AI-Notes feature together with the AI-Stems splitter, allowing you to select an audio file and have it separated into individual stems while transcribing each one to its own MIDI track. AI-Notes converts polyphonic audio—either full mixes or individual instruments—into MIDI that you can view in notation or play back instantly.
