As far as plugins/VSTi for piano.... There's a lot of options. One of the ones I have is the Waves Rhapsody piano. It's not very expensive ($40) compared to some of the piano VSTi on the market. In addition, they almost always have a "B2G1" deal where you can grab 2 plugs and get a third one for free. they have some really nice plugins.

You can also find some fairly decent free ones on some of the sites that sell the better pianos. Just do a google search.
