Years ago, when notation software arrived, I carefully entered a score and played it back.

Well, the notes were correct, but with quantized timing and no dynamics, it didn't sound like a piece of music at all.

That's why I play the parts in. If you happen to hit a wrong note, just keep going. You can fix wrong notes easily in MIDI. As long as the feel and the dynamics are there, you have the human part down.
