probably it's neither the problem of Biab (although audio routing is not too convenient here) nor of the Saffire but of MME, which is originally restricted to two audio (or one stereo) audio channels. So from a multichannel interface only the inputs 1 and 2 show up. Your instrument inputs are afaik routed to channel 5 and 6, so they are invisble for MME. That's the reason why I had no problems: My Saffire 24 has the instrument inputs on 1 and 2. Some interfaces overwit MME by establishing multiple virtual interfaces for each pair of inputs; my Phonic Helix 12 Firewire Mixer for instance appears in MME as "Phonic 1/2", "Phonic 3/4" and so on, and I can select the appropriate one. The Saffire doesn't use the trick; in consequence under MME only the first two inputs can be used.
Is it indispensible that you use MME in Biab? MME seems to be somewhat outdated. I use ASIO for both the standalones and biab with no issues: in the driver settings within Biab I select the Saffire input where I connected the keyboard; I could even record the (Saffire)-output of a standalone e-piano software.
