I always replace the BiaB MIDI sounds with many different VSTis but mostly with Kontakt patches. I also use MIDI CCs (continuous controllers) and the pitch wheel to add nuances to those BiaB tracks. Although I do this in my DAW it can be done in BiaB.

FWIW I would check out the free versions of Kontakt and SampleTank. Both include usable sounds. Note that neither of them are GM so you will have to change the sounds one at a time via the mixer view. If you want or need a GM compatible sound source then look for a 16 channel soundfont (SF2) player with a GM sound set. There are many free SF2 GM compatible sounds available.
