It's all to do with how the brain interprets the sound it hears. The field of study is called Psychoacoustics. When two identical sounds at identical volumes are played at locations equally placed at left and right of center, the brain hears that as straight ahead because that is the location that a natural, external sound has to be when it registers the same in both ears (this is how we identify the position of noises). That is, the ears have been "fooled". It's much the same idea as fooling the eyes with visual illusions.
