Is there anyway to automatically change the settings of the mixer, or the "instruments" used during the course of a song, etc, as you can do on some real mixing consoles ?

Band-in-a-Box doesn't have a feature labeled "Scene" however the program is capable of changing mixer settings, instruments or performing many of the functions available in real mixing consoles.
Ask more questions and forum members will answer them.

I think you're looking for something like the functionality of the Mackie Control Surface can produce.
If so, then it's not currently available in BIAB (althought it's been requested many times).
Volume Automation is available though, but not through the mixer.
You can change instruments though from Bar Settings - function key <F5>

It works : with <F5> I can do what I want !
Change the volume or mute any instrument, change the instrument, tempo etc.
