To get a deeper background sound I've recently used multiple different warm pad & strings, synth pads, etc, on 2 new instrumentals and they've worked really well, so I think you're right that at least 1 or maybe 2 sets of synth pads & strings may have worked better than the organ, but this project's now over for me as it began in the early summer of 23 with a brilliant trained English vocalist, but she only recorded half of the lyrics before her husband - who'd actually suggested her - stopped the project.
