Current version is still UVR v5.6.0.
Anything that's newer may not be legit.
That said, when using UVR, I've preferred the MDX-Net models, but as Mike already mentioned, it depends on the source material.
Please note, however, that almost all models are three years old or older and are therefore no longer state-of-the-art.
And UVR is limited to separating vocals, individual instruments cannot be separated.

But for a completely free, local open-source stem separator, it's still pretty good.
