Classic RealStyles are still there. Scroll down the Category in the StylePiaker.
For your other issue, either edit the RealStyle removing the Soloist or save your new style under a different name. If you load your RealStyle and edit/remove the undesired part, there is a Save Style option in the RealTrack picker that will save your 'new' style to the name of your choice.
I use customized styles and multistyles for my songs. This gives you total control over what you want. But browsing through the RealStyles, it seems like BIAB gives you several options for each style - some with piano, some with guitar, etc. If you can't find what you want, editing the style is the way to go.
