There isn't a "freeze" function, per se, in RealBand. The only thing that you might have to do is to change BIAB tracks to Regular tracks (see the Track menu item). If the first 8 (or so) tracks are blue in color, they are BIAB tracks and will get regenerated when you press the Generate button. If you change them to regular tracks, you can still make changes on them, but have to highlight where you want changes first.

So there really isn't a need for a "freeze" button. RealBand tracks won't change (like BIAB tracks will) unless you explicitly decide to do something with them.

Also, for work in progress, remember you can always make a backup copy of a track to be able to get back to where you were. You've to 48 tracks to play with, so while you are editing MIDI, just back up your work every so often to an unused track, or just export it out to a MIDI file.
