Depending on the genre all you have to do is adjust volume and panning on some of the background horn realtracks. For instance Dixieland tunes with Trumpet, Bone and Clarinet in the background works very well.
However as pointed out style, tempo and feel would more or less dictate what, how and if the existing tracks can do the job for you.
