I can do initial setup for him but we really just want something basic that will do this one specific thing.

Suggestions?

Sibelius is just wonderful for a feature it has that allows the user to play a MIDI instrument such as a keyboard and get realtime notation of what's played, actually watching the notes appear almost immediately after you play them. And, you don't have to play rigidly to a Click or Metronome, either, somehow it has an algorithm that intelligently allows for slight pauses, changes in tempo, etc. - but still prints the music as if it was played to the click the first shot.

As for setup, it isn't that hard to accomplish this, I should think that once you scoped it out as to what to do, where in the menus to invoke a New file, where to invoke this playalong Wizard, not that hard, besides, a 13 year old of today left with the program will likely soon be showing both you and I how to do things with it we had no idea existed, right?

Anyway, my vote would be for Sibelius simply due to this one playalong feature that flat works. There's a few hundred other reasons to go with Sibelius as well *grin*.
