Yep, I like cooking because I like eating.
So over the years, the learning, the practice and the eating have been right up there with other endeavors. Seems like I didn't really come into my own in the kitchen until sometime in my late 50's, though, that's when the skills really seemed to start coming together.
Today I made my signature Peanut Butter Chicken over long grain rice, an old North African dish that I've modified here and there, chicken, braised first, then slow cooked, add hand diced tomatoes, braise the onions, bell peppers, celery in EVOO, then put all but the rice together with a big dollop of peanut butter, ground hot red pepper, pepper flakes from red chiles, not too much, mind you, garlic, parsley and a drizzle in a taste of honey and simmer. Serve over the rice.
Feelin' well fed here now.
Anyway, I got to wondering if we have any other chefs and cheffettes around here, it has been my experience that musicians are into cooking. Well, some of us.

That sounds delicious Mac.
I love to cook too. Today I made pan seared rainbow trout fillets with a side of broccoli, baby carrots and sugar snap peas sautéed in butter.
But one of my favorite meals is this:
Bob's Meat Loaf
I think I’ve finally perfected my recipe for meat loaf. It’s been a work in progress for 30-35 years. So here it is.
2 lbs ground sirloin or chuck 1 lb ground mild sausage 4 eggs 1/4 cup of A1 sauce 1/4 cup of Heinz 57 1/8 cup of Worcestershire sauce 1/8 cup of Tiger brand hot sauce 2 small cans of tomato paste with Italian herbs 2 tblsp of minced garlic 1 tblsp of horseradish 2 of 14-1/2oz cans of Hunts diced tomatoes with roasted garlic – drained
Whisk eggs in a 6 qt. bowl and add all of the other ingredients to eggs and stir before adding beef & sausage and mixing well.
Then chop and add the following ingredients:
1 red sweet pepper 1 yellow sweet pepper 1 orange sweet pepper 1 med-large yellow onion 1 8oz package of sliced baby portabella mushrooms 2 cups Pepperidge Farm cornbread stuffing 2 cups sharp cheddar cheese
Mix well. The best pans to use are a qty. of 5 of a 9” X 5” aluminum disposable pans. Cook uncovered at 350deg for 1hr 15 min. After it’s done, you can top it with tomato paste, (70% tomato paste, 30% water), Heinz ketchup, Parmesan cheese, or cheddar cheese and broil slightly to brown.
It’s very good to freeze some of it for later. Do not put toppings on any loaves that you plan to freeze.

Cook? Are you kidding man? I am from South Louisiana, last Saturday I spent the better part of the day making what turned out to be about 4 gallons of Gumbo. Enough for me and the bride (and a few guest from time to time) for the entire winter, unless my youngest son finds it in the freezer!

I love me some good hot dog chili. Here's mine:
Bob’s Hot Dog Chili
2 lbs. ground beef, 80% lean 2 medium chopped onions 1 chopped green pepper 4 teaspoons minced garlic 2 cans diced tomatoes with garlic & onion 1 12 ounce can tomato paste 1 tablespoon brown sugar 1 tablespoon dried minced onion 2 teaspoons chili powder 3 tablespoon Worcestershire sauce 2 teaspoons salt 1 teaspoon celery seed 1 teaspoon ground cumin 1 tablespoon Tiger sauce
(recommended method)
Use at least a 4 qt. crockpot:
Turn crock pot on low, add un-drained tomatoes, tomato paste, Worcestershire sauce, garlic, spices and Tiger sauce to pot.
Brown meat and add meat to pot, but leave juices in the pan.
Chop onions and peppers, then caramelize in beef drippings. De-glaze pan with balsamic vinegar and add to pot.
Cook for 5-6 hours, stirring every 20 or 30 minutes.
If using saucepan.
Brown beef, onions and green pepper in saucepan. Add remaining ingredients and stir well to combine. Simmer over low heat for 2 hours.

So Mac and Bob and Danny's talk got me salivating and I got to thinking about wha food my kids beg me to make and it's my "gourmet" grilled cheese. It's not much different than typical except swap the butter or margarine for olive oil brushed on, and put your spice of choice on the oiled sides of the bread. (I usually use basil and oregano or white pepper) Swap in some better cheese than American and right before grilling toss a light amount of shredded cheddar on the griddle and set the sandwich on the shredded cheese. Repeat for the other side. Grilling time is shorter than for buttered bread.
I think I'd like the other recipes better than this. If I'm ever going to be in VA Beach, Mac is gonna get a PM from me beforehand where I invite myself over for some dinner and some recording and jamming and maybe some bop appreciation schooling from him.

Microwave Peanut Butter Fudge (This is scrumptious while being easy to make) Note: I prefer Jif PB, its sweeter.
Times: Prep 10 min Inactive Prep 1 hr 0 min Cook 4 min Total:1 hr 14 min
Ingredients: 1 cup butter, plus more for greasing pan (do not use margarine) 1 cup peanut butter 1 teaspoon vanilla 1 pound powdered sugar Directions: Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Bob’s Vegetable Soup
(Use 6 qt. crock pot)
1-1/2 lbs. very small red potatoes – quartered 1 lg. sweet onion – chopped 1 red sweet pepper – chopped 1 yellow sweet pepper – chopped 2 mild banana peppers – chopped 1 12oz pkg baby mushrooms - whole 1 12oz pkg frozen corn 1 12oz pkg frozen green beans 1 12oz pkg frozen peas 1 28oz can of whole plum tomatoes 1 small head of celery hearts – chopped 1 small bag of baby or petite carrots – whole 1 pkg McCormick Hearty Beef Stew mix 2 tblsp minced garlic 1 tblsp Tiger sauce 1 tsp sea salt 1 tsp ground peppercorn medley 1 tsp celery seed 4 14.5oz cans beef broth 2 bay leaves
Take 2 cans of beef broth and pour into crock pot. Add beef stew mix, garlic, hot sauce, salt, pepper and celery seed to broth and mix thoroughly. Add all vegetables. Use remaining 2 cans of broth to raise liquid level in pot to just below the lower lip. Cover and cook on LOW for 10-12 hours. DO NOT remove lid during cooking.
This is some killer veggie soup.

Our own Val is an excellent chef. She also grows and cans her own garden-fresh veggies. She's been away from her songwriting while she preserves her strawberries and vegetables.
