You really don't need to pay for all those input channels to do what you state here. All you need is a good quality two-input, two output sound device plus a mixer for the input side where you can connect all your different sound sources and instruments and control which one goes into the Line In of that sound device. It will also be much less confusing in operation in the long run.

A USB sound device such as the M-Audio Fast Track Pro or the likes is a good choice here, because it not only contains the Line Inputs and Outputs needed, 2 each for stereo, but also allows for connection of a Mic in each channel with built in preamps, in case you want to get started before you buy that small recording mixer for the inputs.
