Macintosh and Windows share the same Vol control methods.

Underneath the Trackname radio buttons and to the right of the Patchnames dropdown window, you should see a horizontal row of little numbers.

Tiny litle windows, in a row.

"Volume - Pan - Reverb - Chorus - etc."

To the right of each little window with a number in it are up and down arrows for clicking on to change that. These windows use the standard MIDI numbers command for Continuous Controllers of 0 to 127 with 127 being the loudest Volume available for each track.

Those windows apply to the BIAB track chosen at the time. For example, to turn down the Piano, select the Piano track's radio button first, then use the Vol spinner to turn it down.

Making those settings "Stick" involves using the File -> Save with Patches and Harmony window and checking off the Vol as well as the Fill with Patches command or the next time you open the song your custom settings won't be there.
