Edits via the Harmony Maker affect the harmony globally over the whole song, e.g. within a reasonable note range one voice may always be an octave shifted etc.. You'll hear the harmony but you won't see it on the standard notation window. You may see it on the on-screen piano while playing, though. "Harmony/Convert Harmony to Melody Track ..." does just that -> writing the harmony to the melody track. Then you can see the harmony on the standard notation window and you may edit the notes to your liking.

When you select 'Split harmonies to different tracks' in the Lead Sheet Options, you may see each voice on its own stave in the lead sheet window.
