The questions:
1) Should I run all the previous 2010 update builds, or does the build 294 contains all the fixes ?
2) Shluld I run also all the realtrack updates for the same reason ?

With PGMusic, the latest update contains all the previous updates, so, no, you don't have to go through all that.

- with some song the pc performs a complete reboot.

All by itself? from BiaB up and running to a complete REBOOT?

Do you get any error messages at all when this happens?

- with some realtrack, when I freeze the tracks and unfreeze again, it happens that the tracks volume are higher as before.

This is a known bug reported by a few people in another thread. I expect there will be an update fix for it someday.

- using the melodist on some realtrack, the real instruments are deleted and subsituted with non-real instruments

Melodists that start with an asterisk * will load their own Style files, typically these are MIDI styles. There is a checkbox to avoid loading the style with the chosen Melodist.

- when I choose to render the whole song on an audio file, an ASIO error message is displayed, but the file is correctly generated.

It would be good to know what the message says. If it is too fast, try to hit the screenshot key when it is showing. Then paste into a graphics program like Paint.

- when I play a song with realtrack instruments, I hear pops and clicks here and there. If I mute all the realtracks but the realdrums, the sound is clear. I've tryed different settings in the ASIO panel, but no joy. Also reverting the audio driver to the mme one, does not help at all. I've also update the ASIO driver to the latest version.

You may need to defrag the disk that has the realtracks on it, also your C drive. RealTracks assemble and then stream from a Temp folder on C drive.

- if I insert a style change at any point in the song, whith all the tracks not frozen, the style will not change when the song reaches that style change. Instead, the previous style continues to be played.

Could this be one of the above songs created with the asterisked Melodist?
