I see in a lot of the demos that there are some very complicated chord choices (i.e. Em7b5, C#m7b5) used for the progressions. However, in most songbooks I've looked at over the years, I don't think I've ever seen so many variations. My question is are these just to show the software can do it if required or I am missing some fundamental approach to songwriting?

I assume you are not looking are any Jazz Charts  . Check our any Jazz Fake Book and you will see the applicaiton of these chords. Or simply listen to the chords and you should recognize them by ear, that is if you listen to Jazz! 
Ah, there lies the issue, maybe! I don't listen to (or play) Jazz. I'm pretty much in the Rock, Pop, Christian category.
