A RealTrack can be "Frozen" to prevent regeneration of that track, but a RealTrack cannot be edited by the note as it is composed of Audio snippets and they are typically whole phrases anyway. Can't change the notes you get.

The second is that I eventually settled for Midi Super track piano. It sounds okay, but too mechanical and pristine. I would have liked to sustain some of the notes and make it much, much more legato.

When using a MIDI synth/sampler, we are at the mercy of the particular sample being played at the time. If that patch happens to have an Attack at the beginning of each note, there is no command to not have that attack. However, some synths have Velocity layers in which using a lesser Velocity figure for the note results in less of the Attack. One can also sometimes play some tricks such as extending the Duration value of a previous note such that it overlaps the attack of the following note a bit, kind of "blurring" the attack of the second note.
